Spicy Fish Taco Bowls



This is my new favorite recipe. I have made it once a week for the last couple of weeks. We generally have most of the ingredients on hand and it's very easy to make on week nights. I make my tilapia the same way I do when I am making fish tacos, another household favorite.

Ingredients
Tilapia
Cajun seasoning
1-2 garlic cloves minced
Olive oil
1/2 red onion diced
1/2 red pepper diced
1 cup of corn
cooked brown rice 1-2 cups depending on how many you are serving
fresh cilantro, squeeze of lime juice, avocado, shredded lettuce, shredded cheese, sour cream, pico de gallo, hot sauce or salsa (all optional toppings)

Directions
Season tilapia on both sides with Cajun seasoning. In a large skillet heat olive oil on high, add garlic and sauté for 2 minutes. Add tilapia and cook through, flipping halfway. Remove tilapia and set aside.

Add corn, onion, and red pepper to the skillet (still on high). Do not stir. Let mixture roast until black/brown then stir to roast both sides. Peppers and onions should be tender crisp.

Layer rice, corn/pepper mix, tilapia, and top with cilantro, avocado, cheese, lettuce, etc.
