Pumpkin Whoopie Pies



I found this recipe on my friend Lauren's Blog. Project 593  I tweaked the recipe a bit and made them for a tailgate this weekend.  Enjoy!

Pumpkin Whoopie Pies

Cookie Ingredients
1 1/2 c. Flour
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
1 tbsp cinnamon
1/2 tbsp ground cloves
1 cup brown sugar
1/2 cup vegetable oil (I used applesauce)
1 1/2 cups chilled pumpkin puree
1 egg
1/2 tsp vanilla

Cream Cheese Filling Ingredients
1 1/2 cups powder sugar
1/2 stick butter
4 oz. cream cheese softened
1/2 tsp vanilla.

Preheat Oven to 325 degrees.
In a medium bowl whisk together the flour, salt, baking soda, and powder, cinnamon, and cloves.

In a separate larger bowl, whisk together the brown sugar and oil (applesauce) until well combined. Add pumpkin puree and whisk until incorporated. Add egg and vanilla.

Mix in flour mixture 1/2 cup at a time until thoroughly combined.

Scoop onto baking sheet with parchment paper to desired cookie size.  Dip fingers into water and flatten dough into disks.

Bake for 10-15 minutes, or until the tops of the cookies start to crack.

"Whoopie" Directions

Use electric mixer to cream the butter. Add cream cheese until combined. Add sugar and vanilla. Mix until smooth.

Once the cookies have cooled completely add "whoopie" to the underside of one cookie. Press second cookie on lightly to make sandwich.

Refrigerate and enjoy!
